It’s hot today. Really hot for mid-May. 85 degrees hot today. The Dude is out working in the yard and I plan on grilling some stuffed turkey burgers. They will be stuffed with smoked sharp cheddar cheese. Should be yummy. But to me the star of dinner will be my favorite roasted corn salad.
I found out about this recipe from Jodi, my sister’s sister-in-law. It brings out the best of summer flavors, you don’t have to heat up your kitchen, and it’s vegetarian friendly.
We are going to mix together corn roasted on the grill, red onion, avocados, grape tomatoes, lime juice and goat cheese. Oh my! Seriously, this will become your go-to salad this summer. Here we go…
Roasted Corn Salad
- 5-6 ears sweet corn, roasted and cut off the cob
- 1 pint grape tomatoes, cut in half
- 2 medium ripe avocados, diced
- 1/4 of a red onion, minced fine
- juice of 2-3 limes
- 1-2 ounces of crumbled goat cheese
- Kosher salt and fresh ground black pepper, to taste
Fire up your grill nice and hot. While waiting for the grill to heat up, husk and clean your ears of corn, making sure to remove all of the silks. Place your ears of corn on the grill and roast, blackened is okay on some of the kernels. After roasting the corn, allow to cool until you can handle them. Cut the kernels off the ears and toss into a bowl.
Add your tomatoes to the corn, along with the onion, avocado and your lime juice. Add salt and pepper to taste. Mix gently, dot with crumbled goat cheese, and try to keep yourself from standing in the kitchen and eating it straight out of the bowl!
The combination of these flavors will knock your socks off. Sweet roasted corn, the sweet crisp burst of tomato, creamy avocado, sharp red onion and the bite of lime with the creamy goat cheese. You will love this!
