I love my crockpot. Especially in the winter when you can make all sorts of lovely stews and soups.
One of my favorites is pulled pork. The recipe I created is the easiest darned thing in the world. Here it is.
- 2-3 pound boneless pork roast (trimmed of fat)
- 1 bottle Russian dressing
- 1 packet dried Onion Soup mix
- salt & pepper to taste
In your crockpot, mix the entire bottle of Russian dressing, add some water to the empty Russian dressing bottle (about half the bottle) and add that too, then mix in the packet of Onion Soup mix. Add some salt and pepper. Stir it up and add the pork roast. Ladle some of the liquid over the pork, put the lid on and set on LOW for 8-10 hours. When the pork roast is done, remove it from the liquid and pull apart with two forks. Return to the liquid and serve on crusty rolls. A nice green salad with ranch dressing would be great with this.
So simple and so good. Dust off that crockpot and get busy!
